It’s a polysaccharide that is commonly used as a food additive but has several industrial uses as well. It can be produced from sugars by the fermentation process and derives its name from the bacteria Xanthomonas Campestris - which is used in the process. It balances pH levels, thickens the consistency of the product and also is a good skin moisturizer. It not just binds other skin ingredients together, but also gives the skin optimal texture.
